1. Place frozen yogurt into an electric mixing bowl; add in BAILEYS™ Coffee Creamer French Vanilla, blend on low until smooth and soft.
2. Add in green food colouring if desired and mix to colour. Then scoop yogurt mixture into a pastry bag with a large star tip.
3. To assemble, lay one chocolate chip cookie face down onto your work surface, and pipe yogurt on top, keeping about 1/4 inch (6 mm) from the outer edge. Place a second cookie on top and press gently until the yogurt comes out to the edge of the cookie.
4. Place in freezer for a minimum of 1-2 hours to refreeze and set cookies.
